Step-by-Step Instructions for Dark Chocolate Quinoa
  1. In a microwave-safe bowl, combine dark chocolate chips and coconut oil, if using. Heat in the microwave for 30 seconds, then stir. Continue heating in 15-second intervals, stirring until the chocolate is completely smooth and glossy.
  2. Once melted, remove the bowl from the microwave and add puffed quinoa to the chocolate mixture. Use a spatula to gently fold the quinoa into the chocolate.
  3. Line a baking sheet with parchment paper. Using a tablespoon or cookie scoop, drop spoonfuls of the chocolate-coated quinoa mixture onto the prepared baking sheet.
