Step‑by‑Step Instructions
  1. In a mixing bowl, combine oyster sauce, soy sauce, sugar, ground white pepper, sesame oil, and minced garlic. Whisk until blended. Add shrimp and marinate for 20 minutes.
  2. Cut spring roll wrappers into thirds and keep covered with a damp cloth to prevent drying.
  3. Roll each marinated shrimp in a wrapper, tucking in sides and sealing with beaten egg.
  4. Heat oil in a frying pan to 350°F. Test by dropping a piece of wrapper; it should sizzle.
  5. Fry wrapped shrimp in batches for 2–3 minutes on each side or until golden brown.
  6. Drain on paper towels and serve immediately with sweet chili dipping sauce.
