- Prepare two thick slices of sourdough bread, each about ½ inch thick.
- Chop dill pickles into small pieces and pat dry with a paper towel.
- Slice the dill havarti cheese into ¼-inch thick slabs.
- Layer half the cheese on one slice of bread, followed by the chopped pickles, then top with the remaining cheese.
- Butter the exterior sides of both sandwich slices generously.
- Preheat a non-stick skillet over medium-low heat and place the sandwich in the pan.
- Cook the sandwich for 4-5 minutes until golden brown, then flip and cook for another 3-4 minutes.
- Add dill pickle chips inside the sandwich while it's warm, then close it.
- Cut the sandwich diagonally and serve immediately.
