- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the chopped fresh spinach, crumbled feta cheese, almond flour, egg, olive oil, garlic powder, salt, and black pepper. Stir gently until well combined but slightly crumbly.
- Using a tablespoon, scoop out the mixture and drop it onto the prepared baking sheet, spacing 2 inches apart. Flatten each portion slightly to about 1/4 inch thick.
- Bake in the preheated oven for 15-18 minutes until the edges turn golden brown and the tops are dry and firm.
- Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack.
