  • 1 large egg for egg-free version, replace with ground flaxseed mixed with water
  • 2 tablespoons olive oil any neutral oil can substitute
  • 1 teaspoon garlic powder fresh minced garlic can be used instead

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the chopped fresh spinach, crumbled feta cheese, almond flour, egg, olive oil, garlic powder, salt, and black pepper. Stir gently until well combined but slightly crumbly.
  3. Using a tablespoon, scoop out the mixture and drop it onto the prepared baking sheet, spacing 2 inches apart. Flatten each portion slightly to about 1/4 inch thick.
  4. Bake in the preheated oven for 15-18 minutes until the edges turn golden brown and the tops are dry and firm.
  5. Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack.
