Ingredients

For the Chips
  • 2 cups Shredded Low-Moisture Mozzarella Can substitute with provolone if preferred.
  • 1 cup Almond Flour Can be swapped with coconut flour; adjust liquid as necessary.
For Flavoring
  • 1 teaspoon Garlic Powder Onion powder is a great alternative.
  • 1 teaspoon Kosher Salt Regular table salt can be used.
  • 1 teaspoon Chili Powder Consider using smoked paprika or cayenne pepper.
  • 1 teaspoon Freshly Ground Black Pepper Omit for milder flavor.

Equipment

  • Microwave-safe bowl
  • Rolling Pin
  • Pizza Cutter
  • Baking sheet

Method

Step-by-Step Instructions
  1. Start by placing the shredded low-moisture mozzarella in a microwave-safe bowl. Heat it in the microwave for about 30 seconds at a time, stirring in between, until the cheese is fully melted and smooth, which usually takes about 90 seconds total.
  2. Once the cheese is melted, add the almond flour, garlic powder, salt, and any other spices you want. Stir the mixture until it forms a smooth dough.
  3. Divide your dough into two equal portions and place one between two sheets of parchment paper. Use a rolling pin to gently roll out the dough to about 1/8-inch thickness.
  4. After rolling, carefully peel off the top sheet of parchment. Use a pizza cutter or sharp knife to slice the dough into triangles or desired chip shapes.
  5. Transfer the cut chips onto a baking sheet lined with parchment paper. Preheat your oven to 350°F (175°C) and bake the chips for 12-14 minutes, watching for a lovely golden brown.
  6. Once the chips are golden and crispy, take them out of the oven and allow them to cool on a wire rack. Sprinkle extra salt or your favorite seasoning on top.
