- Start by placing the shredded low-moisture mozzarella in a microwave-safe bowl. Heat it in the microwave for about 30 seconds at a time, stirring in between, until the cheese is fully melted and smooth, which usually takes about 90 seconds total.
- Once the cheese is melted, add the almond flour, garlic powder, salt, and any other spices you want. Stir the mixture until it forms a smooth dough.
- Divide your dough into two equal portions and place one between two sheets of parchment paper. Use a rolling pin to gently roll out the dough to about 1/8-inch thickness.
- After rolling, carefully peel off the top sheet of parchment. Use a pizza cutter or sharp knife to slice the dough into triangles or desired chip shapes.
- Transfer the cut chips onto a baking sheet lined with parchment paper. Preheat your oven to 350°F (175°C) and bake the chips for 12-14 minutes, watching for a lovely golden brown.
- Once the chips are golden and crispy, take them out of the oven and allow them to cool on a wire rack. Sprinkle extra salt or your favorite seasoning on top.
