Step-by-Step Instructions
  1. Prep Zucchini: Wash and trim the ends of zucchinis, grate them, and squeeze out excess moisture.
  2. Mix Ingredients: Combine drained zucchini, eggs, oat flour, Parmesan (if using), Greek yogurt, minced garlic, dried herbs, salt, and pepper in a bowl.
  3. Heat Skillet: Preheat a non-stick skillet over medium heat with a drizzle of olive oil.
  4. Form Fritters: Shape 2 tablespoons of batter into patties and place in the skillet.
  5. Cook: Fry for 3-4 minutes on one side, flip and cook for another 2-3 minutes until golden brown.
  6. Drain and Serve: Transfer to paper towels to absorb excess oil and serve warm.
  7. Alternate Air Frying: Preheat air fryer to 400°F (200°C), lightly spray the basket, and cook fritters for 8-10 minutes.
