Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add the gnocchi and cook until they float, about 2-3 minutes. Drain in a colander.
  2. Heat olive oil in a frying pan over medium-high heat. Add the boiled gnocchi in a single layer, frying undisturbed for about 2-3 minutes until golden, then flip and crispy on both sides for another 2-3 minutes.
  3. Reduce heat to medium, add minced garlic, and sauté for about 1 minute until fragrant and lightly golden.
  4. Add fresh spinach to the pan, stirring continuously for about 2-3 minutes until wilted and vibrant green.
  5. Season with salt, black pepper, and red pepper flakes if using. Stir in crumbled feta and let warm before serving.
  6. Serve immediately on a platter, drizzling with olive oil and additional feta if desired.
