Ingredients
  

Dressing
  • 1 tbsp rice vinegar Substitution: Use apple cider vinegar if needed.
  • 1 tbsp apple cider vinegar
  • 2 tsp low sodium soy sauce Substitution: Tamari for a gluten-free option.
  • 1 tbsp sugar
  • 1 tbsp honey Substitution: Maple syrup for a vegan option.
  • 2 tsp sesame oil
  • 1/16 tsp ginger
  • ½-1 tsp crushed red peppers optional
  • Salt and pepper to taste
Salad
  • 1 ½ cup pre-shredded carrots Substitution: Freshly grated carrots are also fine.
  • 1 English cucumber sliced thin
  • ¼ cup finely chopped parsley or cilantro
  • 2 tsp garlic finely minced
  • 1 ½ tbsp sesame seeds

Method
 

Prepare Dressing
  1. In a small mixing bowl, whisk together rice vinegar, apple cider vinegar, low sodium soy sauce, and sugar until the sugar dissolves completely. Add honey, sesame oil, sesame seeds, ginger, crushed red peppers, along with salt and pepper to taste. Set aside to let the flavors meld.
Combine Veggies
  1. In a large salad bowl, add pre-shredded carrots and thinly sliced English cucumber. Toss in finely chopped parsley or cilantro, along with minced garlic. Ensure the vegetables are mixed well.
Dress Salad
  1. Drizzle the prepared dressing over the mixed vegetables in the large bowl. Gently toss the salad to coat all the ingredients evenly.
Season
  1. Taste the salad and adjust the seasoning by adding more salt and pepper as needed. Toss again to distribute the seasonings evenly throughout the mixture.
Garnish
  1. If desired, sprinkle additional sesame seeds or chopped peanuts on top of the salad for extra crunch.
Chill
  1. Cover the salad with plastic wrap or a lid and refrigerate for 20-30 minutes to let the flavors meld beautifully.
