Method
 

Preparation Steps
  1. In a medium mixing bowl, combine cottage cheese, almond flour, and a pinch of salt. Mix until a smooth dough forms, about 2-3 minutes.
  2. Place the dough between two sheets of parchment paper and roll out to about 1/8 inch thickness.
  3. Remove the top layer of parchment, and cut the dough into squares or preferred shapes.
  4. Preheat your oven to 350°F (175°C). Arrange the cut crackers on a parchment-lined baking sheet.
  5. Bake the crackers for 15-20 minutes until golden brown.
  6. Allow the crackers to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
