Ingredients
  

For the Tots
  • 2 cups Broccoli Fresh or frozen
  • 2 large Eggs Can use chickpea flour mixed with water for vegan option
  • 1 cup Almond Meal/Flour Can substitute with 1 cup of breadcrumbs
  • 1 cup Sharp Cheddar Cheese Can substitute with mozzarella or omit for dairy-free
  • 2 cloves Garlic Minced; can use garlic powder if fresh is not available
  • 1 teaspoon Salt Optional; omit for baby servings

  • Parchment paper
  • Mixing bowl

Method
 

Cooking Instructions
  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cut broccoli into small florets and chop stems. Steam stems for 1 minute, then add florets and steam for an additional 3-4 minutes until tender. Drain thoroughly.
  3. Chop steamed broccoli and transfer to mixing bowl. Add shredded cheese, eggs, almond meal, and minced garlic. Mix until well combined.
  4. Scoop the mixture using a heaped tablespoon and shape into small tots. Place them on the prepared baking sheet.
  5. Optionally, spray tops of tots with cooking oil. Bake for about 20 minutes until golden brown and crispy.
  6. Let cool for a couple of minutes. Serve warm with dipping sauces.
