Preparation Steps
  1. Prepare the onions by trimming the tops and slicing into quarters, soaking in buttermilk for 10 minutes.
  2. Mix together the flour, paprika, garlic powder, onion powder, cayenne, and salt in a shallow dish.
  3. Set up a breading station with soaked onion wedges, flour mixture, and panko breadcrumbs.
  4. Coat onion wedges in flour, dip in buttermilk, then roll in panko, pressing to adhere.
  5. Heat vegetable oil in a skillet until shimmering at 350°F (175°C).
  6. Fry coated onion wedges in small batches for 2-3 minutes until golden brown.
  7. Mix mayonnaise, ketchup, Worcestershire, horseradish, and smoked paprika for the dipping sauce.
  8. Remove fried onions, drain on paper towels, serve hot with dipping sauce.
