For the Shrimp
  • 1 pound Large Shrimp, peeled and deveined (U31-40)
  • 1 cup Buttermilk or milk mixed with vinegar
  • 1 teaspoon Kosher Salt essential ingredient
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Black Pepper adjust to taste
For the Coating
  • 1 cup Cornstarch or all-purpose flour
For the Sauce
  • 1/2 cup Mayonnaise Kewpie for richer taste
  • 1/4 cup Thai Sweet Chili Sauce
  • 1 tablespoon Sriracha Hot Sauce adjust for heat preference

Method
 

Marination and Preparation
  1. In a medium bowl, combine the large shrimp with buttermilk, kosher salt, garlic powder, onion powder, and black pepper. Marinate for 10 minutes.
  2. While the shrimp is marinating, prepare a shallow dish with cornstarch for dredging.
Cooking
  1. Dredge each marinated shrimp in cornstarch and lay them on a baking sheet in a single layer.
  2. Heat oil in a large pot to 350°F for frying.
  3. Fry the shrimp in batches for about 2 minutes, or until golden brown, then transfer to paper towels.
  4. In a bowl, mix mayonnaise, Thai sweet chili sauce, and sriracha.
  5. Toss the fried shrimp in the sauce until well coated and serve immediately.
