Marination and Preparation
- In a medium bowl, combine the large shrimp with buttermilk, kosher salt, garlic powder, onion powder, and black pepper. Marinate for 10 minutes.
- While the shrimp is marinating, prepare a shallow dish with cornstarch for dredging.
Cooking
- Dredge each marinated shrimp in cornstarch and lay them on a baking sheet in a single layer.
- Heat oil in a large pot to 350°F for frying.
- Fry the shrimp in batches for about 2 minutes, or until golden brown, then transfer to paper towels.
- In a bowl, mix mayonnaise, Thai sweet chili sauce, and sriracha.
- Toss the fried shrimp in the sauce until well coated and serve immediately.
