  • 10 oz Frozen Spinach Thaw and drain thoroughly.
  • 1 cup Artichoke Hearts Chop and drain well before use.
  • 1 medium Yellow Onion Finely chopped.
  • 2 cloves Garlic Cloves Minced.
  • 1 tsp Kosher Salt
  • 1/2 tsp Ground Black Pepper

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). In a food processor, combine the soaked raw cashews, mayonnaise, and a splash of water. Blend for 1-2 minutes until smooth.
  2. Transfer the cashew mixture into a large mixing bowl. Add the drained spinach, chopped artichoke hearts, onion, garlic, salt, and pepper. Stir until well combined.
  3. Pour the mixture into a greased baking dish and spread evenly. Bake for approximately 20 minutes until bubbly and golden on top.
  4. Remove from oven and let cool for a minute. Serve warm with chips or veggies.
