- Cook the udon noodles in boiling water according to package instructions (4-5 minutes), reserve ½ cup of noodle water, drain, and rinse.
- Sauté butter, garlic, and shallots in a skillet over medium heat for 2-3 minutes until fragrant.
- Add gochujang, cooking for another 30 seconds to bloom the flavors.
- Pour in heavy cream while stirring and add reserved noodle water as needed, then stir in soy sauce and gochugaru. Simmer for 3-5 minutes.
- Add cooked noodles into the sauce, toss well to coat, and cook for an additional 1-2 minutes.
- Serve in bowls, garnished with parmesan, green onions, and a raw egg yolk.
