Ingredients
  

For the Noodles
  • 8 oz Udon Noodles frozen works great for convenience
For the Sauce
  • 2 tbsp Butter or olive oil for a lighter option
  • 3 cloves Garlic (minced) freshly minced gives the best flavor
  • 1 medium Shallot (chopped) or yellow onion as a substitute
  • 2 tbsp Gochujang adjust for spice preference
  • 1 cup Heavy Cream or half-and-half or coconut cream for a lighter version
  • 1/2 cup Reserved Noodle Water essential for sauce consistency
  • 2 tbsp Soy Sauce low-sodium varieties are best
  • 1 tsp Gochugaru or red pepper flakes as a substitute
  • 1/4 cup Parmesan Cheese (grated) optional for richness
  • 2 tbsp Green Onion (chopped) for garnish
  • 1 large Egg Yolk for serving on top

Method
 

Instructions
  1. Cook the udon noodles in boiling water according to package instructions (4-5 minutes), reserve ½ cup of noodle water, drain, and rinse.
  2. Sauté butter, garlic, and shallots in a skillet over medium heat for 2-3 minutes until fragrant.
  3. Add gochujang, cooking for another 30 seconds to bloom the flavors.
  4. Pour in heavy cream while stirring and add reserved noodle water as needed, then stir in soy sauce and gochugaru. Simmer for 3-5 minutes.
  5. Add cooked noodles into the sauce, toss well to coat, and cook for an additional 1-2 minutes.
  6. Serve in bowls, garnished with parmesan, green onions, and a raw egg yolk.
