- Pat dry the boneless skinless chicken thighs with paper towels. Drizzle oil in a bowl and toss chicken with salt, pepper, and ½ teaspoon garlic herb seasoning until coated.
- Place seasoned chicken thighs in a cold, non-stick skillet. Heat over medium-high and cook undisturbed for 8 minutes, until golden brown.
- Chop garlic and fresh herbs. Measure out chicken broth or water, and have the soft cheese ready.
- Flip each chicken thigh after 8 minutes and cook for an additional 2 minutes, ensuring internal temperature reaches 165°F.
- Reduce skillet heat to medium. Add a splash of oil, garlic, and remaining garlic herb seasoning. Sauté for 30 seconds until fragrant.
- Deglaze skillet with ¼ cup of chicken broth. Gradually stir in soft cheese until melted and blended, adding more broth as needed.
- Return chicken thighs to skillet, toss in creamy sauce to coat evenly. Simmer for a minute, then serve immediately.
