Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with olive oil.
  2. Cut the chicken breasts horizontally to create cutlets and pound them with a meat mallet for uniform thickness.
  3. Whisk together olive oil, minced garlic, Italian seasoning, salt, and pepper in a mixing bowl. Marinate the chicken cutlets for 15 to 30 minutes.
  4. In a skillet, sauté the fresh spinach in olive oil over medium heat until wilted, about 2 to 3 minutes.
  5. In a mixing bowl, combine softened cream cheese with the sautéed spinach and half of the mozzarella until smooth and creamy.
  6. Arrange the marinated chicken cutlets in the baking dish and spread the creamy spinach mixture over it. Top with remaining mozzarella.
  7. Bake the casserole for 20 to 30 minutes until the chicken reaches 165°F and the cheese is bubbling and golden brown.
