Step-by-Step Instructions

  3. Carefully place the brie in the center of the rolled-out pastry and score the top in a crisscross pattern.

  5. Gently fold the pastry over the brie, sealing the edges tightly to prevent leakage.
  6. In a small bowl, beat an egg and brush it over the surface of the pastry; sprinkle coarse sugar if using.
