For the Crackers
  • 6 sheets Filo Pastry Thawed properly
  • 4 tablespoons Butter Melted, or use olive oil for a lighter option
  • 200 grams Brie Can substitute with camembert
For the Filling
  • 100 grams Cranberry Sauce Store-bought or homemade
  • 50 grams Flaked Almonds Can substitute with walnuts or pecans
For Garnish
  • 2 tablespoons Black Sesame Seeds Can substitute with poppy seeds

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.
  2. Cut thawed filo pastry into 36 squares, approximately 10x10 cm, and keep covered with a damp cloth.
  3. Take one square of filo pastry, brush it with melted butter, and place a slice of brie, one teaspoon of cranberry sauce, and a sprinkle of flaked almonds at one end. Roll tightly and pinch the edges.
  4. Arrange on baking trays with space in between. Brush with remaining butter and sprinkle with black sesame seeds.
  5. Bake for 15-20 minutes until golden brown and crispy.
  6. Remove from oven, cool slightly, and add fresh rosemary or chives as garnish before serving.

Notes

Keep everything dry to prevent tearing and use two sheets of filo pastry per cracker for extra support. Can be prepared in advance and frozen for best results.
