Ingredients

For the Crackers
  • 36 squares Filo Pastry Ensure it’s thawed properly
  • 4 tablespoons Butter Can be swapped with olive oil for a dairy-free version
  • 12 slices Brie Camembert can be a delightful substitute
  • 12 teaspoons Cranberry Sauce Jarred or homemade options work well
For the Crunch
  • 12 teaspoons Almond Flakes Feel free to replace with any crushed nuts or seeds
  • 2 tablespoons Black Sesame Seeds Adds visual flair and a hint of nuttiness

Equipment

  • Oven
  • Baking trays
  • Parchment paper
  • Brush

Method

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper. Thaw the filo pastry and cut it into 36 squares (approximately 5cm by 5cm each).
  2. On a clean surface, place a square of filo pastry and brush it with melted butter. Layer a slice of brie, a teaspoon of cranberry sauce, and a teaspoon of almond flakes at one end.
  3. Roll the filo pastry from where the filling is, pinching both ends to secure the filling, creating a parcel. Repeat for all squares.
  4. Arrange the filled crackers on baking trays, brush with melted butter, and sprinkle with black sesame seeds. Bake for 15-20 minutes until golden brown.
  5. Allow to cool slightly before serving. Garnish with rosemary or chives for presentation.
