  • 1 red bell pepper Sliced
  • 1 pound white fish fillets Cut into bite-sized pieces
Broth
  • 1 can coconut milk
  • 3 cups fish or chicken broth Use vegetable broth for vegetarian version
  • 2 tablespoons fish sauce Soy sauce for vegetarian version
  • 2 limes Juiced
  • 1 teaspoon sugar Can be omitted or replaced with honey or maple syrup
  • salt and pepper To taste

  • ½ cup fresh cilantro Chopped

Method
 

Preparation Steps
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion and sauté until it becomes translucent, about 5 minutes.
  2. Stir in 2 minced garlic cloves and 1 tablespoon of grated ginger. Cook for about 1 minute until fragrant.
  3. Add 1 sliced red bell pepper to the pot and sauté for about 3-4 minutes until softened.
  4. Pour in 1 can of coconut milk and 3 cups of fish or chicken broth. Stir gently and bring to a simmer.
  5. Mix in the juice of 2 limes, 2 tablespoons of fish sauce, and 1 teaspoon of sugar. Season with salt and pepper to taste.
  6. Gently introduce 1 pound of white fish fillets into the broth and simmer for about 5-7 minutes until cooked through.
  7. Remove from heat and stir in ½ cup of chopped fresh cilantro.
  8. Ladle the soup into bowls and garnish with lime wedges.
