Preparation Steps
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion and sauté until it becomes translucent, about 5 minutes.
- Stir in 2 minced garlic cloves and 1 tablespoon of grated ginger. Cook for about 1 minute until fragrant.
- Add 1 sliced red bell pepper to the pot and sauté for about 3-4 minutes until softened.
- Pour in 1 can of coconut milk and 3 cups of fish or chicken broth. Stir gently and bring to a simmer.
- Mix in the juice of 2 limes, 2 tablespoons of fish sauce, and 1 teaspoon of sugar. Season with salt and pepper to taste.
- Gently introduce 1 pound of white fish fillets into the broth and simmer for about 5-7 minutes until cooked through.
- Remove from heat and stir in ½ cup of chopped fresh cilantro.
- Ladle the soup into bowls and garnish with lime wedges.
