- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 cup of granulated sugar, 2 teaspoons of baking powder, 2 teaspoons of ground cinnamon, and 1/2 teaspoon of salt.
- In a separate bowl, beat together 2 large eggs and 3/4 cup of milk until smooth. Stir in 1 cup of diced apples and 1 teaspoon of vanilla extract.
- Gradually pour the wet mixture into the bowl with dry ingredients, gently folding them together until just combined.
- Pour enough vegetable or canola oil into a deep fryer or a heavy-bottomed skillet to fill it about 2 inches deep. Heat the oil to 375°F (190°C).
