Step‑by‑Step Instructions
  1. In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 cup of granulated sugar, 2 teaspoons of baking powder, 2 teaspoons of ground cinnamon, and 1/2 teaspoon of salt.
  2. In a separate bowl, beat together 2 large eggs and 3/4 cup of milk until smooth. Stir in 1 cup of diced apples and 1 teaspoon of vanilla extract.
  3. Gradually pour the wet mixture into the bowl with dry ingredients, gently folding them together until just combined.
  4. Pour enough vegetable or canola oil into a deep fryer or a heavy-bottomed skillet to fill it about 2 inches deep. Heat the oil to 375°F (190°C).
  5. Once the oil is hot, carefully drop spoonfuls of batter into the oil, frying each fritter for about 2-3 minutes until golden brown.
