  • 1 can Black Beans rinsed
  • 1 cup Corn or diced bell peppers
  • 1 cup Cherry Tomatoes halved or use diced tomatoes
  • 1 Avocado or sour cream
  • 1/2 medium Red Onion sliced, can substitute with green onions
  • 1/4 cup Feta Cheese optional, can skip for dairy-free
  • 1/4 cup Extra Cilantro for garnish
  • 2 Lime Wedges for serving

Step-by-Step Instructions
  1. In a medium bowl, whisk together fresh lime juice, olive oil, chopped cilantro, minced garlic, cumin, chili powder, salt, and pepper. Marinate the flank steak for at least 15 minutes.
  2. Cook rice according to package instructions and rinse black beans under cold water.
  3. Preheat grill or skillet over medium-high heat. Sear the marinated flank steak for 4-6 minutes on each side.
  4. Slice the rested steak against the grain. Layer bowls with rice, beans, corn, tomatoes, avocado, and onion.
  5. Drizzle with remaining marinade or lime juice and garnish with feta cheese and cilantro. Serve immediately with lime wedges.
