Method
 

Step-by-Step Instructions
  1. In a medium mixing bowl, combine 1 cup of rolled oats and 1/3 cup of chia seeds. Stir until evenly mixed.
  2. In a small saucepan, add 1/2 cup of almond butter and 1/4 cup of honey. Heat over low heat for 2-3 minutes until smooth.
  3. Stir in 1/4 cup of raw cacao powder, a pinch of fine sea salt, and 1 teaspoon of vanilla extract. Mix until fully incorporated.
  4. Pour the chocolate mixture over the oats and chia seeds. Stir well for 2-3 minutes until evenly coated.
  5. Cover the bowl and refrigerate for 5-10 minutes to firm up the mixture.
  6. Gently fold in 1/2 cup of dark chocolate chips until evenly mixed.
  7. Using a small cookie scoop or hands, form the mixture into heaping tablespoon-sized balls.
  8. Refrigerate the formed balls on a parchment-lined cookie sheet for at least 30 minutes to set.
