  • 1 teaspoon Cumin omit if unavailable
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper freshly ground
For the Bowl Assembly
  • 2 cups Cooked Quinoa or Rice quinoa is gluten-free
  • 1 cup Cherry Tomatoes halved
  • 1 cup Corn canned, fresh, or frozen
  • 1 medium Avocado sliced
  • 1/4 cup Fresh Cilantro chopped
  • 2 pieces Lime Wedges for serving

Method
 

Preparation Steps
  1. Marinate the Chicken: Mix olive oil, lime juice, lime zest, chili powder, cumin, garlic powder, salt, and pepper in a bowl. Add chicken breasts and refrigerate for at least 30 minutes.
  2. Preheat the Grill: Heat your grill or skillet over medium-high heat.
  3. Cook the Chicken: Grill chicken breasts for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F (75°C). Let it rest.
  4. Prepare the Bowls: Add cooked quinoa or rice to the bottom of serving bowls.
  5. Add Fresh Veggies: Slice the chicken and layer it atop the quinoa or rice. Add cherry tomatoes and corn.
  6. Garnish with Avocado and Herbs: Top with sliced avocado and cilantro. Serve with lime wedges.
  7. Repeat and Serve: Assemble bowls as needed and serve immediately.
