Method
 

Preparation
  1. In a medium glass jar, combine tahini, lower-sodium tamari, rice vinegar, maple syrup, toasted sesame oil, and minced garlic. Seal the jar and shake vigorously for 30 seconds until smooth.
  2. Finely chop Napa cabbage, slice matchstick carrots, and chop green onions, creating a vibrant base for your salad.
  3. In a large mixing bowl, add shredded rotisserie chicken, Napa cabbage, carrots, and green onions. Toss gently for even distribution.
  4. Sprinkle roasted salted cashews over the salad mixture. Mix carefully to maintain the cashews' integrity.
  5. Drizzle sesame-teriyaki dressing over the salad, starting with half and adding more as needed. Toss gently for 1 minute.
  6. Sprinkle fresh cilantro and optional toasted sesame seeds on top. Serve immediately or refrigerate in an airtight container for up to two days.
