  • 1 cup bell peppers Any mix of red, green, or yellow.
  • 1 small hot pepper Adjust according to spice tolerance.
  • 1 medium tomato Diced.
  • 1 teaspoon chicken bouillon powder
  • 1 tablespoon Creole seasoning

Equipment

  • Large mixing bowl
  • Small Bowl
  • Deep skillet or frying pan

Method

Preparation
  1. In a small bowl, combine 1/3 cup lukewarm water, 1 tablespoon sugar, and yeast. Stir gently and allow it to sit for about 5 minutes until frothy.
  2. In a large mixing bowl, whisk together 4 cups of flour, 2 tablespoons of butter, 1 teaspoon salt, 1/2 teaspoon nutmeg, 1 teaspoon cinnamon, 1 tablespoon baking powder, and 3 tablespoons sugar. Pour in the activated yeast mixture and mix until a slightly sticky dough forms.
  3. Transfer the dough onto a floured surface and knead for 2-3 minutes until smooth and elastic. Divide into balls the size of a golf ball.
  4. Cover the dough balls with a kitchen towel and allow them to rest in a warm spot for 20-30 minutes until they rise.
  5. Heat oil in a skillet over medium heat. Flatten each dough ball to about 1/2 inch thick and fry for 1-2 minutes on each side until golden brown.
Filling Preparation
  1. Boil 1 pound of saltfish in water for 10-15 minutes to remove excess salt, then flake it into small pieces.
  2. Heat oil in a skillet and sauté chopped onions, garlic, bell peppers, and hot peppers for 3-4 minutes.
  3. Add flaked saltfish to the sautéed mixture, then stir in diced tomatoes, chopped scallions, chicken bouillon powder, and Creole seasoning. Cook for another 5-7 minutes until aromatic.
Serving
  1. Serve the hot Caribbean Fried Bakes alongside the savory saltfish mixture.
  2. Allow everyone to fill their bakes with the flavorful saltfish and enjoy warm.
