Preparation
- In a small bowl, combine 1/3 cup lukewarm water, 1 tablespoon sugar, and yeast. Stir gently and allow it to sit for about 5 minutes until frothy.
- In a large mixing bowl, whisk together 4 cups of flour, 2 tablespoons of butter, 1 teaspoon salt, 1/2 teaspoon nutmeg, 1 teaspoon cinnamon, 1 tablespoon baking powder, and 3 tablespoons sugar. Pour in the activated yeast mixture and mix until a slightly sticky dough forms.
- Transfer the dough onto a floured surface and knead for 2-3 minutes until smooth and elastic. Divide into balls the size of a golf ball.
- Cover the dough balls with a kitchen towel and allow them to rest in a warm spot for 20-30 minutes until they rise.
- Heat oil in a skillet over medium heat. Flatten each dough ball to about 1/2 inch thick and fry for 1-2 minutes on each side until golden brown.
Filling Preparation
- Boil 1 pound of saltfish in water for 10-15 minutes to remove excess salt, then flake it into small pieces.
- Heat oil in a skillet and sauté chopped onions, garlic, bell peppers, and hot peppers for 3-4 minutes.
- Add flaked saltfish to the sautéed mixture, then stir in diced tomatoes, chopped scallions, chicken bouillon powder, and Creole seasoning. Cook for another 5-7 minutes until aromatic.
