- In a medium bowl, beat 8 oz of softened cream cheese, 1 cup of powdered sugar, and 1 tsp of vanilla extract until smooth and fluffy. In a separate bowl, whip 1 cup of heavy whipping cream until stiff peaks form. Fold whipped cream into cream cheese mixture gently. Transfer to a square dish and chill for 30 minutes.
- After chilling, remove the cheesecake mixture from the fridge. Cut the cheesecake into small squares, about 1-inch in size. Return squares to fridge while preparing the fruit.
