Step-by-Step Instructions
  1. In a medium bowl, beat 8 oz of softened cream cheese, 1 cup of powdered sugar, and 1 tsp of vanilla extract until smooth and fluffy. In a separate bowl, whip 1 cup of heavy whipping cream until stiff peaks form. Fold whipped cream into cream cheese mixture gently. Transfer to a square dish and chill for 30 minutes.
  2. After chilling, remove the cheesecake mixture from the fridge. Cut the cheesecake into small squares, about 1-inch in size. Return squares to fridge while preparing the fruit.
  3. In a large serving bowl, layer in 2 cups of halved strawberries, 1 cup of green grapes, and 1 cup of red grapes. Mix gently to distribute colors and flavors. Arrange chilled cheesecake bites on top.
  4. Sprinkle 1 cup of crushed graham crackers and ½ cup of chopped peanuts or pecans over the layers. Drizzle your favorite caramel sauce over the top.
