- Preheat a non-stick skillet over medium heat for about 2 minutes.
- Melt 1 tablespoon of butter in the pan, swirling to coat, then butter one side of the bread.
- Spread a generous layer of spinach pesto over the bread in the skillet.
- Tear the burrata into chunks and place on top of the spinach pesto.
- Butter the outer side of a second slice of bread and place it on top.
- Cook for about 3-4 minutes until the bottom is golden brown, then flip carefully.
- Cook for another 3-4 minutes until the other side is golden and the burrata is melted.
- Remove from skillet, let rest for a minute, then slice and serve immediately.
