  • 1/4 cup Cilantro Can substitute with parsley.
  • 1 medium Avocado Ripe and mashed.
  • 1/2 cup Cottage cheese Can use Greek yogurt.
  • 1/4 cup Mayonnaise Low-fat versions are acceptable.
  • 1/2 teaspoon Onion powder
  • 1/2 medium Lime Juice only.
For the Roll-Ups
  • 2 medium English cucumber Use additional Persian cucumbers if needed.
  • 4 ounces Whipped cream cheese Can omit for dairy-free.
  • 1 tablespoon Everything bagel seasoning Optional but recommended.
  • to taste Chipotle hot sauce Serve on the side.

Preparation Steps
  1. Begin by shredding or dicing the cooked chicken. In a bowl, combine the chicken with soaked red onion, chopped cilantro, and diced avocado. Mix gently until well incorporated.
  2. In a blender, blend together cottage cheese, mayonnaise, onion powder, lime juice, and a pinch of salt and pepper until smooth.
  3. Slice the English cucumbers thinly, about 1/8 inch thick, and pat them dry to maintain crispness.
  4. Spread a thin layer of whipped cream cheese on each cucumber slice, add a spoonful of chicken salad at the bottom, and roll tightly.
  5. Slice the roll ups into bite-sized pieces and arrange on a serving platter. Sprinkle with everything bagel seasoning.
