For the Salsa
  • 1 cup Mango Fresh or frozen, chopped.
  • 1 medium Avocado Firm avocados are best.
  • 2 tablespoons Lime Juice Freshly squeezed is recommended.
For Serving
  • 2 cups Rice Brown or jasmine rice works well.

Preparation Steps
  1. Preheat your oven to broil at 500°F (260°C) and prepare a baking sheet with aluminum foil.
  2. Pat the salmon fillet dry and place it skin-side down on the sheet pan. Drizzle with olive oil and rub in a mixture of brown sugar, chili powder, garlic powder, and a pinch of salt.
  3. Broil the salmon for 6-8 minutes, checking for doneness at 6 minutes until it flakes easily.
  4. While the salmon cooks, chop the fresh mango and avocado. Squeeze in lime juice, add a pinch of salt, and mix gently to combine for the salsa.
  5. Remove the salmon, flake it gently with a fork, and serve it over cooked rice topped with the mango avocado salsa.
