- In a medium bowl, mix together the shredded chicken, BBQ sauce, diced red onion, and pickled jalapeños until well combined.
- Take two thick slices of sourdough bread and butter one side of each. In a frying pan, place the buttered slices with the butter-side down.
- On the unbuttered side of the bread, layer two slices of Monterey Jack cheese. Spoon half of the BBQ Chicken mixture over the cheese, then top with two slices of Cheddar cheese.
- Place another slice of buttered sourdough bread on top, ensuring the butter-side is facing up.
