Step-by-Step Instructions for Baked Chicken Tacos
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat avocado oil over medium heat. Add diced onion and minced garlic, cooking until soft and translucent, about 3-4 minutes.
  3. Add ground chicken to the skillet and cook until browned and almost cooked through, about 5-6 minutes.
  4. Sprinkle in paprika, cumin, chipotle pepper, sea salt, and black pepper. Pour in enchilada sauce and cook until chicken is fully cooked, about 2-3 minutes.
  5. Wrap corn tortillas in a damp paper towel and microwave for 30 seconds to soften.
