- Preheat the oven to 375°F (190°C). Slice the mini bell peppers in half lengthwise and remove seeds and membranes. Arrange cut-side up on a parchment-lined baking sheet.
- In a microwave-safe bowl, mix the fat-free feta cheese and Laughing Cow cheese. Microwave for about 20 seconds to soften slightly, then blend until creamy.
- Add everything bagel seasoning and chili crunch to the cheese mixture and stir until well combined.
- Stuff each mini pepper half with the cheese mixture, mounding slightly for presentation.
- Bake in the preheated oven for 15-20 minutes, until the peppers are tender and the cheese is lightly golden.
- Remove from the oven, let cool for a couple minutes, and optionally garnish with sliced green onions or fresh herbs before serving.
