  2. In a microwave-safe bowl, mix the fat-free feta cheese and Laughing Cow cheese. Microwave for about 20 seconds to soften slightly, then blend until creamy.
  3. Add everything bagel seasoning and chili crunch to the cheese mixture and stir until well combined.
  4. Stuff each mini pepper half with the cheese mixture, mounding slightly for presentation.
  5. Bake in the preheated oven for 15-20 minutes, until the peppers are tender and the cheese is lightly golden.
  6. Remove from the oven, let cool for a couple minutes, and optionally garnish with sliced green onions or fresh herbs before serving.
