- Cook the Bacon: Heat a skillet over medium heat. Add bacon strips and cook for 6-8 minutes until crispy. Remove and crumble.
- Whisk the Eggs: In a bowl, crack the eggs and season with salt and pepper. Whisk until mixed.
- Scramble the Eggs: Add butter to the skillet, melt, and pour in whisked eggs. Stir gently and scramble for 3-4 minutes until set.
- Assemble the Quesadilla: Lay a tortilla flat, add shredded cheese, scrambled eggs, and crumbled bacon on one half.
- Fold the Tortilla: Fold the tortilla over to form a half-moon shape.
- Cook the Quesadilla: In the skillet, add a pat of butter, cook the quesadilla for 2-3 minutes on each side until golden brown.
- Slice and Serve: Remove quesadilla, let cool, and slice into wedges. Serve with salsa if desired.
