  • 2 large Flour Tortillas Corn tortillas for gluten-free option
  • 4 slices Bacon Can substitute with turkey bacon or sausage
  • 4 large Large Eggs Egg whites can be used for a lighter version
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 cup Shredded Cheddar Cheese Substitute with mozzarella or pepper jack
  • 1 tablespoon Butter Olive oil or margarine can be used as a replacement

Method
 

Cooking Instructions
  1. Cook the Bacon: Heat a skillet over medium heat. Add bacon strips and cook for 6-8 minutes until crispy. Remove and crumble.
  2. Whisk the Eggs: In a bowl, crack the eggs and season with salt and pepper. Whisk until mixed.
  3. Scramble the Eggs: Add butter to the skillet, melt, and pour in whisked eggs. Stir gently and scramble for 3-4 minutes until set.
  4. Assemble the Quesadilla: Lay a tortilla flat, add shredded cheese, scrambled eggs, and crumbled bacon on one half.
  5. Fold the Tortilla: Fold the tortilla over to form a half-moon shape.
  6. Cook the Quesadilla: In the skillet, add a pat of butter, cook the quesadilla for 2-3 minutes on each side until golden brown.
  7. Slice and Serve: Remove quesadilla, let cool, and slice into wedges. Serve with salsa if desired.
