For the Crumble
  • 1 cup Oats can use gluten-free oats
  • ½ cup Walnuts can substitute with pecans or almonds
  • 2 medium Apples sliced or stewed for sweetness
For Extra Flavor
  • ¼ cup Water for sautéing apples
  • 1 tablespoon Maple Syrup to taste

Method
 

Step-by-Step Instructions
  1. In a blender, combine soy milk, yogurt, apple butter, Medjool dates, miso paste, cinnamon, cardamom, and a pinch of salt. Blend on high until smooth, about 1-2 minutes.
  2. In a mixing bowl, whisk the blended base with chia seeds and let it sit for about 5 minutes to thicken. Cover and refrigerate for at least 1 hour.
  3. In a food processor, pulse oats, walnuts, dates, and a pinch of salt until coarse crumbs form. Spread on a baking sheet and toast in a preheated oven at 350°F for 10-12 minutes.
  4. Sauté fresh apples in a skillet over medium heat with water, maple syrup, and a sprinkle of cinnamon for 3-4 minutes until soft.
  5. In serving jars, layer the chia pudding, then stewed apples, and sprinkle with crumble topping.
  6. Drizzle with additional apple butter and maple syrup if desired before serving.
